Herb-Crusted Lamb Chops
Succulent lamb chops crusted with a fragrant mixture of fresh herbs, garlic, and olive oil, grilled to perfection and brushed with Dijon mustard for an extra layer of flavour.

In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, sea salt, and black pepper.

Rub the lamb chops with the olive oil and then coat them with the herb mixture. Let them marinate for 30 minutes at room temperature.

Preheat your grill or grill pan to medium-high heat.

Place the lamb chops on the grill and cook for about 4-5 minutes on each side, or until they reach an internal temperature of 60°C (140°F) for medium-rare.

Brush each chop with Dijon mustard during the last 2 minutes of cooking.

Remove the lamb chops from the grill and let them rest for 5 minutes before serving.
